Challenge yourself to go vegan at least one day of the week: no animal products whatsoever. With even this small of a change, you'll make a huge impact. Experiment with different types of food. Tofu, tempeh, seitan and texturized vegetable protein are excellent meat alternatives. Don't overlook soy and rice milk, and play around with egg and butter substitutes.
